I am popping in really quick today. The weather is so beautiful and I can’t stand to be inside (so this post will be free of photos.)

The crepes recipe I shared went over so well that I wanted to share another favorite (non-breakfast) crepe recipe we make often in our home.

I make these crepes for Jon to pack in his lunch, for Ezra and I to eat during our lunch or even for a quick, easy dinner night. They are super delicious and we LOVE them! As I shared before Ezra is pretty picky when it comes to eating foods (not snacks) and bread isn’t something he likes very much, but crepes are a favorite of his.

Lunch, snack, dinner crepes

2 large eggs

1 cup of flour (I use half non-bleached all purpose & half whole wheat white from trader joes)

3/4 cup milk (I use 1%)

1/2 cup water

1/2 teaspoon vanilla

2 tablespoons of melted butter (and sometimes I use melted organic coconut oil instead)

Place all your ingredients in a blender or mixer and mix well. Grease the saute pan with butter or cooing spray. Cook on medium (or medium low) heat for about 1 minute until the sides get slightly crispy, then flip for just a moment. Remove and place on a plate.

Variations-

Add shredded cheese & spinach once the first side is cooked and flip in half. (Ezra’s favorite way to eat them)

Add shredded cheese & ham while cooking

Spread with almond butter and mashed banana

Spread with cream cheese & strawberry preserves (Ezra also loves this!)

Fill with seasoned ground beef (we use grill seasoning) and cheese and flip in half. (Tastes similar to a hamburger)

*Recipe adapted from here

This weeks list…

Peeps with graham crackers & an Andies mint–(much like a s’more, but better!) throw it in the microwave for 30 seconds & it’s a heavenly snack! Just had to use up all our peeps from Easter, ya know?!

Ezra’s outdoor car- The weather has been warming up and we’ve been spending hours outside. Ezra LOVES to play with his water table (without water right now), but he also loves his car. I got it last year at a garage sale and it has been a huge hit! I can push him around in it or I can take the floor out and he can propel himself. We have been having so much fun!

Trader Joe’s Mango Greek Yogurt- It’s my current favorite breakfast food with a little bit of granola.

Hypnobirthing- Re-reading this book, getting ready for our Clary Baby’s birth. I didn’t read this one until the end of my pregnancy with Ezra and I think that reading this one early will be helpful during the labor and birth of our girl.

Breakfast dates- Ezra and I have been having breakfast dates lately. The fact that I only have a few weeks left with only him is weighing heavy on my heart and I really want to relish this time and give him my full love and attention when it’s just the two of us at home (when daddy comes home the love has gotta be shared with my Jon too). Breakfast dates are so fun! We get out the door first thing in the morning and spend so much time giggling

Today we got to take a peek into my growing belly and look at our girl in 3-d. What an incredible experience to watch your child kick you as you can feel it from the outside. I loved looking at her features and getting a glimpse into who she is as she grows. She looks so different than Ezra and I just cannot wait to meet our daughter! We are so in love!

A bit about her name-

Years ago, Bobbi + Mike (some of my favorite photographers) photographed a family that had the cutest names. Clary was the mom’s name. As I read her name I wrote it down in a word document next to the words “future girl’s name.” Fast forward a few years and we were pregnant with Ezra, before we knew his gender we had decided he would be named Ezra if he was a boy and Clary is he was a girl. Well we all know how that one ended. We planned maternity photos and newborn photos with our Ezra; I had loved Clary’s photography so we hired her and shared with her our love for her name. Over the past year and a half I have found myself reading ingredient labels and noticing “Clary Sage” in those ingredients. I would be reminded that possibly one day that may be our daughter’s name. As soon as we found out we were having a girl we knew her name would be Clary. There were no doubts. And we LOVE the name. I always wanted my kids to have names that were unique, but not too different. I wanted my daughters name to be unique and feminine. I think Clary perfectly fits that description. (In case you don’t know for sure, you pronounce it ‘Claire-E’) Her middle name was not as easy to decide. We never had a definite full girl’s name. We just added to the list of possibilities rather than taking away. I had my favorite and Jon had his, but then there were new favorites and other fun possibilities. We finally took time away from thinking on names and really didn’t talk about it for weeks. A few Friday’s ago Jon planned dinner out for us and as we drove I shared that although I didn’t feel 100% yet about one of his name choices that I thought it could be Clary’s middle name. He laughed and asked why I even brought up her name since we hadn’t talked about it in so long. Little did I know he was taking me to dinner to tell me he wanted Clary to have the middle name I loved, the middle name that was my maiden name, and he had decided he wanted her to have that name quite a while ago, but just hadn’t told me. How crazy is that?! I, of course, was shocked. I told him we did not have to use that name; I felt bad that it was my favorite and I didn’t want him to just be giving in. He assured me he wasn’t and that he loved it too! I think having a family name is just so special and we believe she will adore her name. So her full name is…

Clary Christy

Our sweet, dear Clary, we sure cannot wait to meet you darlin’!

This weeks tasty Tuesday is one of Ezra’s favorites! It’s a smoothie. I make Ezra a daily smoothie for his mid morning snack before nap time. He always gobbles it right down & sometimes I do too! I will include the recipes to Ezra’s two favorite smoothies, but obviously you could make any kind you want by simply throwing in some ingredients.

Ezra’s favorite smoothie

1 container vanilla Yo Baby yogurt

3-4 strawberries

a handful of blueberries (I often use frozen because Ezra prefers to eat them frozen anyway)

1/2 of a banana

a handful of frozen peas

Enough milk to make it consistency you want

& sometimes if Ezra’s lucky he gets a splash of mango juice (only if we have it on hand)

Ezra’s second favorite smoothie

1 frozen banana (I freeze my bananas in smaller pieces in order for the blender to cut them up easier)

a scoop of almond or peanut butter

1/2 cup frozen cauliflower

enough milk to make it the consistency you want (we prefer this one to be more like ice cream & eat it with a spoon)

I am still trying to get veggies in my boy as often as I can. These smoothies help me tremendously. Thankfully he has begun to find some veggies he really enjoys eating raw, but he hasn’t found a taste for any of them cooked yet.

Sorry for the delay on this post! I had a busy, wonderful day Friday and I couldn’t get this post up & then we had a crazy, busy weekend. But here are my Friday favorites from the past week…

Strawberry cupcakes- These are so amazing! I made them for Jon’s birthday on Thursday along with the homemade buttercream icing and we loved every single bite. I added a couple of drops of almond extract to the batter and substituted a bit of coconut oil for some of the butter. These tasted heavenly. I don’t think I will make a box cake again.

Indianapolis Zoo- We are so thankful that the weather is beginning to warm up and have been taking every chance possible to head to the zoo. We just love being outside so much! The zoo is a perfect place because Ezra never gets tired of seeing the animals & playing on the playgrounds. And I just love spending the day with my boy!

Sacred Parenting- Jon and I are re-reading this book (we read it shortly before having Ezra). It’s one of my favorite parenting books and really reminds my heart of the responsibility of bringing Ezra up without selfish motives, but genuine love for him as well as thankfulness for the Lord sharing his life with us. I highly recommend it if you haven’t had time to read it!

My favorite blog- I used to read blogs often before I had Ezra and I had more time to follow along with bloggers, but my time for unnecessary things is pretty nonexistent these days. However, this blog is a daily read for me as I do my devotions during Ezra’s nap time. I have been challenged, humbled, and thankful for the ways she shares the love and heart of Jesus. I suggest reading it if you can fit it into your own busy life.

We are big breakfast eaters around here. I was telling Jon just the other day how thankful I am for this stage of life where Ezra is little and our mornings can often be spent slowly getting ready, making breakfasts from scratch and having fun while wearing our pjs. It’s the little things that make my heart so happy! One of our very favorite breakfast right now is crepes. We LOVE them and have them at least once a week, but often more. I found this recipe a few weeks ago and the crepe making hasn’t stopped

Our favorite Crepes

1 cup whole milk

3 eggs

1 tsp vanilla (sometimes it runs over my spoon, but I won’t complain:).)

1 cup flour

2 tbsp sugar (sometimes we use maple syrup instead and they are great!)

1/4 tsp salt

about 3 shakes of cinnamon (it calls for just a pinch, but we like more)

cooking spray

powdered sugar for the top

fruit of your choice (we LOVE oranges quartered)

To make:

Combine milk, eggs, and vanilla in a blender until well combined. Add the flour, sugar, salt, and cinnamon. Blend until incorporated. Be sure to scrape the sides down as ingredients like to stick.

Spray an 8-inch nonstick round skillet with flared sides with the cooking spray. Cook the crepes on medium low (and be sure to warm the skillet first). Pour about 1/4 cup of batter into the skillet and swirl to make a thin layer (a very thin layer is key). Cook until the bottom is lightly browned and it can easily be flipped. Flip and cook only for a few moments on the other side.

Fold the crepe in half, and then half again. Transfer the crepe to a plate and sprinkle with powdered sugar.

Now is the time when you can make the crepe exactly as you want it. We prefer to squeeze our quartered orange onto the crepe making a yummy icing when mixed with the powered sugar; however, you can make it to your liking. A few other options we love are: lemons for squeezing, yogurt for dunking, or filled with a small layer of yogurt and fruit. So, so yummy! And sometimes if we want a special treat I will throw a few chocolate chips in. Who says you can’t have some chocolate for breakfast?!

I am excited to share my Friday favorites with you from week to week! I plan to share at least one favorite thing from the week, although some weeks there may be more than one favorite. I love searching the internet looking for favorite recipes, books, blogs, etc. and when I find them to be great I want to share with you

So this weeks favorites are:

Sausage and Tortellini Soup- This recipe is so, so yummy! I added some pesto filled tortellini from Trader Joe’s and it tasted heavenly. We even gobbled up the leftovers!

Peanut Butter Crunch Clif Bars- I have been living on these for the past few weeks. With Clary I find myself not very hungry in the evenings and if I choose to eat anyway I have a hard time sleeping due to indigestion and acid reflux which seems to make me very sick in the morning. I have found that if I make sure to get the appropriate calories in during the morning and earlier afternoon I can eat a cliff bar for dinner along with some sort of vegetable (usually a cucumber because I love them!) and then I am set until breakfast.

Ina May’s Guide to Childbirth- I am reading this book right now. I read through the entire book when I was expecting Ezra and loved the wisdom. I have found myself loving it even more with this pregnancy since I have a better understanding of what labor and delivery without drugs looks like. It’s a great read for me before bed and I can really treasure the time of Clary kicking while the rest of the house is asleep.

And here is a photo from this week of pregnancy…

I cannot believe we are less than 3 months from meeting our daughter. We have so much anticipation and excitement about her upcoming life in the world outside the womb!
